Waffle Burger opens in Dover NH at 603 Pizza on Central Ave.

DOVER — Dennis Hackett believes ready-made food tastes better on a waffle.

This view is at the heart of his new business, Waffle Burger, which is scheduled to open June 28 at 603 Pizza on Central Avenue. He credits his wife Kelly for her homemade traditional Belgian waffles.

“My wife makes a really good waffle, and one day we had some leftover waffles and no (burger) buns,” Hackett said. “Waffle burgers are nothing new, you see them on the internet nowadays, but it has been a long time since I made a waffle burger. I just thought it was really good.”

Waffle Burger owner teams up with old friend

Hackett, a native and current resident of Rollinsford, is an Army veteran, welder and quality control specialist. Now he’s putting a twist on late-night bites in downtown Dover.

He said Waffle Burger will start as a small food operation and be brought to life in collaboration with Luke Marshall, his longtime friend and a fellow Somersworth High School student.

Marshall, owner of 603 Bar and Lounge, 603 Pizza and 603 Barbershop & Gentleman’s Shave Parlor at 364-368 Central Ave., was intrigued by Hackett’s idea.

“We’ve maintained our friendship since high school,” said Marshall, a civilian employee of the Portsmouth Naval Shipyard who was best man at Hackett’s wedding five years ago. “He said, ‘Luke, how about this idea?’ I thought, ‘I’ll entertain that, Dennis.’ It’s a great idea.”

Waffle burger starting with 5 menu items

There will be five items on the Waffle Burger menu at opening, although the company could expand in the future. The original waffle burger features a hamburger patty between two house-made waffles with American cheese, pickles and hot maple syrup from The Spicy Shark in Portsmouth.

The Spicy Shark’s hot maple syrup is also used on chicken and waffles and a waffle pastrami dish.

Waffle Burger also offers a waffle dessert with traditional syrup and whipped cream and frozen waffles to take home.

Waffle Burger newest expansion for 603 businesses on Central Ave.

Marshall, a Rochester resident, purchased the 603 Bar and Lounge in January 2020 and has expanded his portfolio in recent years by acquiring more businesses in the area.

“The thing about this pizzeria is that there are about three billion other pizzerias in Dover,” Marshall joked. “I’m happy to introduce a new variety and late-night snack… they’re pretty much all (handheld) food items, so they’ll be quick, easy, late-night snacks for bar patrons. “

Growth is the plan for Hackett, but his vision starts with the limited menu and walk-up counter.

“Eventually I plan to sell waffles at farmers markets, and this is my home address for the business,” he said. “But for starters, I’m really just focusing on making sure the restaurant sells and makes its own waffles.”

Hours for Waffle Burger, 603 Pizza and the 603 Bar and Lounge are Tuesday through Sunday from 11 a.m. to 1 a.m.
